Clam And Fish Chowder Recipe
In the opening chapters of Moby Dick, Ishmael enjoys a bottle of clam and cod chowder before setting sail. Make your own with this recipe.
Ingredients
- 2tbsp olive oil
- 2tbsp unsalted butter
- 1 1/2pounds potatoespeeled and halved
- 2large leeksfinely chopped
- 4 celery stalksfinely chopped
- 4sprigs thyme
- salt and pepper
- 1/2cup dry white wine
- 4cups fish stock
- 2cups heavy cream
- 4pounds little neck clamsscrubbed
- 2pounds skinless codroughly chopped
Instructions
- Heat the oil and butter together.
- Add the potatoes, leeks, celery and thyme and sauté.
- Add the salt and pepper and stir for five minutes.
- Add the wine and allow to come to boil. Cook until halved.
- Add the stock and cream and add the salt and pepper and bring to a simmer.
- Simmer for 60 minutes.
- Add the clams and stir for 10 minutes.
- Season the cod and add to the pot.
- Simmer for five minutes and serve.
